I have a mesh that I want to cut into, ideally using another mesh that I already have. Is there a way of doing this please? Apologies if this is a rubbish explanation!

If I understand you correctly, you have two meshes, A and B.
And you wish to take a B shaped bite out of A.

You will want to research the Boolean Modifier.
