I have been messing around with env maps, but when I do reflections, they look unrealistic because it is the pure reflection. Is there any way to put a basic color or texture on top of the env map, and change it's opacity to give it a more realistic look?

Go to your envmap in the texture buttons. In the lower left corner, there should be three color settings (obviously, for RGB). These are probably your best bet for controlling the envmap's color. Note that these sliders go to 2.0, instead of 1.0. To change how visible it is, go to the material buttons and under the buttons that say "Mix", "Mul", "Add" and "Sub", lower the value of the Color slider until you like it.

Switch off 'col' and switch on 'Csp' and 'Cmir', in the env map texture channel.

To have another texture showing, put it on another texture channel, below the env map channel, and move the col slider for the env map down a bit (to reduce the env map's opacity and therefore make the other texture show more).
