In general if you want better textures you would want to use higher image resolution values , so when you make your UV's you would want to crank up the res size higher such as 1024 by 1024 or 2048 by 2048 and so on for better quality. next to the image tab you should have a view tab and you toggle that to paint
if its not there turn your mouse wheel on that bar mb its hiding from you ehehe.

its very possible that you might have switched to wire display mode , in the main panel to the right were you have your textures , material and world tabs click on your object tab and go to display and make sure you have it on solid or textured not wire .
