Actually you can assign two different UV-maps onto one object since the latest blender release. There is no need to separate the head of the body. Just assign Multiple UV's to your snake: 1 for its head and the other one for its body. More information about how to use multiple UV's can be found here...

look out for the outputpanel in the Editbuttons (F9). There you can specify the file type, the destination folder, etc to render the animation to.

No "Around Active" in Edit Mode

I did not notice this before, but if you Set "Turnable" and "Around Active" in Blenders Preferences, there is no "Around Active" in Edit Mode.
