Instead you can just parent the clothing to the Head armature.Then it wont get the subsurf from the body.

Make sure you have the textures option in the render pannel selected.This enables the rendering of textures.Also make sure you have added some material to the object.And then a image texture with same image as your UV and choose mapping option to be UV rather than generated. If it still doesn't work...

In the material of the object, under the options tab there is a check box for face textures and face texture alpha.You need these to be enabled for your uv maps to show up in the render.

I guess the tutorials which you are following are little old.
As for the selection of complete meshes, you need to go into wire frame view and then use your c/b type selection.Actually your current method of selection operation is neglecting vertices on back side.

If u mean want your texture to produce height variations on your mesh, then yes.There is way to do that in Blender.

With your object selected, add a modifier "Displace" from the modifier menu.
Here, give the texture which has the image to be used for height mapping.
