is this an animation or a sequence?

All your options are in the scene tab (F10)

Choose a destination folder from the Output tab,
Choose an appropriate x&y size in the Format Tab
Choose either:
Quicktime in the format tab, select your codec and hit the ANIM button.

You might get better compression and quality with FFMpeg and then select Quicktime in the Video tab that appears.

If is a sequence, same principle just select Do Sequence

Check out the wiki: http://wiki.blender.org/index.php/Doc:Manual, lots of tips here.

It's a little odd; there used to be (at least in the mac version) an option to encode videos directly as quicktime. Now there's only avi & such. Luckily that's not a big deal to convert, though.

tsg,

I'm using RC3 and have the option to encode directly as quicktime, Video encoding is dependent though on having your own encoders, divx etc but I've never had issues with quicktime (expect the huge files it produces).
