Armature Question

I've been using the cg cookie flex rig to practice various animation techniques and have found it to be incredibly useful. My question is how do you go about setting up the type of controls used on that rig on a mesh you've created yourself? I've created armatures before using bones and have also used the Rigify plugin. How do you convert bones to pose controllers like the ones used in the cg cookie flex rig? Do you have to create the controllers from scratch? If so, can someone point me to a tutorial which shows how to do this?
