Reference Imaging 3D issues

Reference Imaging 3D issues

Hello, I am very new to Blender and decided to begin by reference modelling, it is going pretty well, just one issue.

When I begin by placing a mesh, it is fully 3 dimensional in whatever shape I created it, but as I begin to extrude, Blender seems to pick and choose what remains 3D, while some remain uniform size, others are simple faces, flat and do not pop out like normal, any specific reason it does this? what can I do to prevent this from occurring? I have a couple more ideas, but in the mean time, I'd like to hear from some experienced users.
