I'm having trouble insalling these. Can somebody give me some simple directions on how to do this?

Well you just tip the files into your Scripts folder, launch our favorite soft, open a "scripts" window and here they are, under "theme" to be found.
Then save your UI with the new theme. (Save Default Setting)

Bye !

probably ask at blenderartists.org and you are more likely to find someone knowledgeable about their usage on a mac,
