How do I cut up an object to create a UV template?

OK - I am new at this - only installed about 8 hours ago.
I have modelled a shirt in Hexagon and the people there say that Blender is the best tool for creating and maintaining these UV meshes.
I have modelled a shirt and want to put a pattern on the sleves seperate to the body and collar but have absolutely no idea how to start.
(I'm 53 and the grey cells are failing me)
I've tried the manual but whenever I try to UV mesh the shirt I get a twisted octopus looking object which I have no idea how you can cut up or apply materials to create the texture I want for the shirt.

I would greatly appreciate any/all feedback on how to get started if not how to do this garment so that I can use blender to get the shorts and jeans to be mapped also.

Unfortunately it is one of those things that are very difficult to explain by typing words.

Forgive me if you have already had a look at Youtube video, but have a look at this one, this might be able to answer your question.
